then why the lj demos are done by first (do they after every jump stop the demo and then start to record again?)

It is very common to use a script which stops the demo then starts a new one by hitting the button you assigned the script to.
When I record maprecords then I use a plugin which restarts and starts a new demo, and when I am recording a trickjump etc, then I use "bind mouse5 "say /gocheck;stop;wait;record my-trickjump" "
